Sweet Potatoes and Apples for Christmas, Tasty Green Beans for Christmas, Onions with Christmas Honey-Glaze, Basmati Rice Pilaf (Christmas), and Christmastime Brussels Sprouts

 

 

 

Sweet Potatoes and Apples for Christmas

      3    Sweet potatoes*
      1 c  Apples; sliced and peeled
    1/4 c  Sugar; brown
           Cinnamon
           Butter
    1/4 c  Apple juice or water
 
* Peeled, then cut in half and sliced.
Cook sweet potatoes covered till nearly done in very little boiling water.

Grease baking dish and place alternate layers of sweet potatoes and apples.

Add cinnamon to the brown sugar. Sprinkle layers with sugar mixture. Dot with butter and pour over the water.

Bake for about an hour at 350 degrees F.

Tasty Green Beans for Christmas

      3 pk (10 oz) Frozen Green Beans*
      Butter
    1/2 ts dried Garlic powder
    1/8 ts dried Rosemary
    1/8 ts dried Basil
      2 tb Chopped Parsley

Cook green beans according to package directions. Add melted butter and garlic powder and mix well.

Sprinkle with rosemary, basil, and parsley.

Onions with Christmas Honey Glaze

     10 md Onions
     1/2 c  Breadcrumbs, Seasoned*
      1 c  Corn kernels
      1 c  Zucchini, diced
      1 c  Grated carrots
      1 c  Beets, diced
      1 c  Water

Christmas Honey Glaze:
    1/2 c  Honey
   1/4 c Mustard
   1 tbsp Balsamic vinegar
  1/2 tsp  Paprika
  1/2 tsp  Ginger
     Salt & pepper to taste

Topping:
      1/2 c  Breadcrumbs, seasoned*
      Parsley for garnish

*Or use plain breadcrumbs and just add the seasonings of your choice.
Preheat oven to 350 degrees F.

Peel onion, slice in half lengthwise. Remove the onion centres leaving a hollow in the centre

In a bowl, stir together 1/2 c breadcrumbs, corn, zucchini, carrots and beets.

Firmly pack mixture into the onion halves.

Arrange in a shallow baking dish and pour water in the bottom

For Christmas Honey Glaze:
In a separate bowl, whisk together the honey, mustard, balsamic vinegar, paprika, ginger, salt and pepper.

Drizzle half the Honey Glaze over the top of the onions. Bake 30 minutes.

Drizzle with the remaining glaze and bake for another 30 minutes.

Just before serving, sprinkle onions with 1/2 cup breadcrumbs and broil until the crumbs are golden brown (watch them carefully).

Garnish with a few sprigs of parsley.

Basmati Rice Pilaf (Christmas)

3 3/4 c Water
2/3 c Basmati rice, rinsed
2/3 c Brown rice, rinsed
1 ts Seasoned salt
2 tb Butter
1 c Chopped red onion
1/2 c Finely diced celery
2 md Tart apples, peeled, cored and diced
1/3 c Orange juice
1/2 c green onions
    Seasonings of your choosing
Salt and Black pepper to taste
1/2 c Pecans
2 tb Freshly minced parsley

Stir rices into boiling water and add salt. Simmer covered for 40 minutes.

Heat butter in a large skillet; saute onions and celery till golden. Add apple and saute for 5 minutes. Stir in rices with orange juice, green onions, and seasonings.

Saute mixture for 5 minutes, stirring.

Just before serving, stir in pecans and parsley.

Christmastime Brussels Sprouts

4 c Water
3 lb Brussels sprouts*
2 ts Red wine vinegar
2 ts Lemon zest
1 Lemon, juiced
Salt and pepper to taste
1/3 c Chopped parsley

*Select small sprouts, large ones tend to be bitter and woody tasting.
Boil water in a large pot and add brussels sprouts. Cover and cook for about 10 minutes.

In the meantime, whisk together the vinegar, lemon zest, lemon juice, salt, pepper, and parsley in a small bowl.

Drain sprouts, transfer them to a serving bowl and toss with the lemon-vinegar mixture.
